WHO LOVES WAFFLES??
For many years, I’ve really avoided waffles and pancakes because they leave me feeling ‘over carbed’, so these being lower in carbs helps A LOT.
INGREDIENTS AND INSTRUCTIONS:
4 TBS unsalted butter or coconut oil, melted
6 large eggs
1/2 tsp (1 dropper full) Stevia drops ( I use KAL)
1/2 tsp sea salt
1/2 tsp baking powder
1/3 cup coconut flour
My mom used a blender for mixing up pancakes and waffles and it works so well to blend all this.
mix the melted butter or coconut oil and eggs very well
add the stevia, sea salt, baking powder – mix just to combine
add the coconut flour and mix until it’s smooth
allow to sit for about 10 minutes to thicken
get your waffle iron heating during the wait time
brush the waffle maker with melted butter or oil to keep the waffles from sticking
Cook like you normally cook waffles! How do you eat your waffles?
