Last Sunday, I had a good opportunity to go deer hunting and ended up SICK with a fever and completely miserable! All week I was sick off and on and it was awful and truly no fun!
This soup helps to clear out the fridge AND can help boost your body with great nutrition when you’re sick or starting to feel run down.
Don’t feel compelled to use only what I list that I used, it was seriously a fridge clean out combined with a lot of garlic!
Here’s what I used and how I did it.
1 medium yellow onion
1 head of garlic – I wasn’t joking! LOL
4 or 5 stalks of celery
3 beets and greens
4-6 carrots
3 roma tomatoes
1 patty pan squash that just needed to be used
Sweet potatoes, regular potatoes, butternut squash are good in this as well.
salt, pepper, garlic powder
I was SICK! So instead of standing there chopping stuff, I cut into big chunks and used the food processor.
Everything will be pureed at the end, unless that freaks you out, then chop into whatever size makes you happy.
Use a heavy pot and add a few Tablespoons of Olive Oil, saute the onion, celery and garlic until the onion is translucent.
Add the rest of the chopped veggies and mix them in to coat them with the olive oil and onion mix.
Add JUST enough water to cover the veggies. Use bone broth if you have it on hand for extra nutrition.
Simmer until the carrots or beets are fork tender. I test the hardest veggies.
Using a stick blender, blend really well. I always think that my body needs to have more liquids then solids when I’m sick so it has less to deal with for healing. That may just be silly, but I also love this blended. It’s so creamy!
Add seasoning to taste.
